Underground Meats was founded in 2009 by Jonny Hunter. What if we combined Old World curing techniques with some New World audacity, and threw in a dash of Midwestern moxie? Thus, Underground Meats was born – part artisan workshop, part flavor laboratory. Every aspect of production is done by our team of nine: butchery, production, post-production and quality control, packaging, sales, and shipping.
